  1. Wrap beets in tinfoil and roast for 45 min at 400 degrees F. Slice the beets and set aside. Chop onion and cabbage and saute in oil until wilted. Add the beets , tomatoes. stock and simmer for 30 minutes. Add the vinegar and brown sugar. Season with salt and pepper . Finish off with a dollop of sour cream and green onion.
